There is basically two options for solo-grinding as you level up. You can aoe grind the mobs, in which a shield and one-hander is necessary, or you can fight one mob at a time, in which case a heavy 2-hander is necessary. What you described to me in terms of gear would be great if you had a 2-hanader up, but using a sword and shield with what you just described would be much much slower.
If you are dead set on using a sword and shield, then I would suggest the AOE grinding build, as that will net you the most experience, in which case you wouldn't even touch the ret tree for a long time, as other talents in the prot tree would be far more necessary.
As for tanking, you don't need any of the talents in the ret tree to hold aggro, vindication, eye for an eye, and sanc aura really don't help you as much as you think it will.
Now, what you described you can level with, you can pretty much level doing anything you want, I am just assuming you want the most effecient way to level, and I would strongly suggest an AOE grinding build, which focuses way more on the prot talents than the ret talents. Paladins can put out amazing reflection damage, but you have to spec for it, and wasting talents in ret just makes the fights even longer.

As for a build, most AOE tanking specs don't really start kicking off until about 35 when you can get a full reckoning thing going, you'll also have enough talents to really take a beating.
Here's a normal AOE grinding build by 35 By 50 you would have a build like this And something like this by 60 where we are now touching ret.
After that, I think you can freely choose where you want to put your talents, you should have a hang of it by then. These are also builds where you can maximize both your grinding and tanking potential at the same time.
