I can only speak for the shadow side, but I think most people on here seem to agree that around 600-800 +shadow spell dam is good for starting Kara, which is easily achievable with a little work (800 is closer to ideal, but 600 is passable). The first goal however is maxing spell hit, which I believe is +76 spell hit rating with talents.

For shadow, 800 damage and hit cap, with mana pool and mana regen being mostly ignored. The goal is about +1200 unbuffed by the time you're in early SSC/TK, and possibly (very much personal preference though) +101 or +126 hit rating so you can drop a point or two from Shadow Focus for more useful talents.

For holy, I'd say at least 100mp5 inside the FSW and +1200 healing, and once again with enough regen, mana pool is mostly ignored. Higher mana regen than that is preferable, though. My guild's two best priests are running right around +2000heal and 200mp5 unbuffed in Kara and crafted gear.
