I read a lot of comments saying how great resto druids are in PvP, but do they get much work in instances (particularly high level ones)? I guess my question is does the rebirth cooldown keep them from being main healers?
Not at all..I'm a main healer druid, and can get any group I want, whenever I want. It's most important to establish yourself as a good healer, and you'll have no issues getting a group. I very rarely have been rejected from a group for simply being a druid.

Ditto, Resto druid at 70 and getting dungeons is fine. Some groups do moan about the res cool down, but then again all the party needs is a pally or shaman doing DPS or whatever and there is that problem solved.

In 5-mans the rez CD can be a bit difficult, but indeed nowadays there are enough enh/enc shamans, protadins, shadow priests and so on that it's possible to have a player who can rez and who isn't the main healer. Also on some servers healers are so few and far between that just getting one in the group is good enough. Finally, the CD will be brought down to 20 mins only in 2.3, which is nice.
In 25-mans it's not a problem at all, there are many ppl who can rez, actually resto druids are very welcome because they can rez in combat, which is in a 25-man raid is much more important than to rez out of combat.
Group with a shadow priest of shaman, and all will be well.
Honestly, keeping a group alive in a 5 man as a dedicated resto druid should be very simple as long as your group is competent.
Healers can basically call the shots on grouping in my server.
