I'm having a bit of trouble at 56 (60% to 57) finding a blue or better weapon that I can use until I hit 60 and farm honor and tokens for the PVP maces I would like to go.

Its not exactly super great, I'm really at a loss what I should have for a helm and shoulders as the best I have been able to find are in leather. I'm full enchancement with 41 points into it and 6 into resto. I know you guys get a lot of "hey look at my gear and tell me what I should do" but I'm really running out of ideas.

Whatever you get pre-Outland will be worse than what you will get after about 10 minutes of questing in Hellfire Peninsula. Pre-BC Gear < BC Gear. Azeroth blues will be replaced by Outland greens in a matter of hours. Believe me, at level 56 your only worry should be getting to 58 quickly.
