I'm highly curious about some basic strategic suggestions regarding PvP, esp world PvP with this class.
There are way too many mechanics for this class (for any class) to paint the entire PvP spectrum for you on a blank canvas. Not trying to be an *** here, but the best favor you can do yourself is to figure it out by your lonesome. If, after some experience, you find you're having problems, then come back here with some more specific questions--as specific as possible--and we'll try to help you.

What are some basic moves used in surviving gank attempts?
See above.

What spec builds give good survivability yet can still allow fairly adequate questing? I've read a few posts on here and saw that Prot seems the way to go.
Protection and Retribution both work for leveling. Read the sticky, there is plenty of good information in there.

I have my first five points in the holy tree to get strength boost. I then plan later to dump the rest of my points to prot all the way to 58. Good decision?
Bad decision.

Again, go figure it out for yourself and come back if you have problems.

One final question is, if ganked (lets say 1v1 for example) is damage high enough to kill most classes, or is it better off to just get the hell outta dodge?
While Paladins are quite capable of winning at least some fights, they will never do so by out-damaging their opponents. They win by outlasting them in battles of attrition. Heal through their damage, cleanse their DoT's and debuffs, shield and heal to full, etc.
If you're looking to burst people down and win damage races, you could not have picked a worse class.
