Bah, I was working my way through the catacombs, and I got invaded and killed. I thought one of the items I had banished phantoms, but apparently that was wrong (and now I've wasted the item). I also got sent back to Firelink afterwards, instead of to the last bonfire that I had activated. I don't get why.
That's been my first moment with the game. I guess that's pretty good, considering.
Was he using a Lightning Shotel? Seriously, @#%^ that weapon.

Drake sword, I think. I almost had him dead, but I made a dumb mistake and used too much stamina. His combo finished off my endurance and then he 2-shotted me.

Definitely wasn't a Lightning Shotel, then. You'll know when it is, because your shield won't block any of the damage, and then you'll be dead.

1. What exactly does poise do?
2. If upgrading a weapon to a type that reduces/eliminates stat scaling, why would I ever consider that over normal weapons, which scale with all the points I put into DEX?
3. What other DEX weapons should I consider looking into besides my longbow and winged spear? I can't seem to find anything else that uses DEX.

1. Poise has to do with your chance to be staggered when attacked. The more poise you have, the less chance of being interrupted while attacking you have. It also reduces the chance of being knocked down, etc. It basically compensates for not being able to really roll-dodge on heavy armor setups.
2. Depends on what you're upgrading and why. You might want a divine weapon for the catacombs, for instance. Or you might upgrade a typically STR-based weapon to use on your DEX character.
3. DEX is also used with curved swords and daggers. The Falchion and Scimitar-type blades can be upgraded to Quelaag's Furysword, while the Uchigatana and Iaito-type blades can be made into the Chaos Blade. Both take Quelaag's Soul. An upgraded Lightning Shotel is one of the best PVP weapons currently.
Poise is awesome. I've always stuck with the Knight's set, even when other sets of gear came a long that had more defense (but no Poise). Havel's stuff is pretty sweet.
Also, Fire/Lightning weapons are awesome at low levels, before your character has a lot of Strength, Dexterity, etc. But once you get to high levels, you're going to want a weapon that scales with your stats.
My Lightning Halberd and Fire Sunlight Straight Sword have been great for me, especially since I didn't focus on STR, DEX at all.
And characters that aren't going to be heavily investing in damage stats will love the elemental weapons. It's a really nice way for a tank-spec to get some extra damage, or a Mage-spec before you can make weapons with high ratings in Int or Faith (which are rare, and will most likely take a lot of upgrading to get).
Generally speaking, everyone I have seen speak about them adores using lightning weapons. They don't lose their edge until a very high soul level, and even then only if you are actively investing in attack stats.

I'm totally cool with you killing me with completely unpredictable game elements. I'm okay with you throwing obscenely high-leveled enemies at me out of nowhere. I'm okay with you stabbing me in the side with booby-trap spiked statues. I'm okay with you having the floor collapse underneath me and letting me get pancaked by a 60 ft tall demon's axe. No big deal.
What I'm not okay with, is letting me get an hour into the catacombs, and then glitch, making me fall through the floor for 2 minutes, until I ultimately die.
In demon souls I was farming in world 5 and spent an hour or two going through 5-1 and/or 5-2. I was a minute or two from the warp thingy right before the boss that I had already beat. I rolled on the wooden stairs.. into the wooden stairs and because glitched and trapped. Thank god I had evacuate on, or else I would have had to say goodbye to 1-2 hours of farming. (I still remember having to evacuate out losing me a lot of something.)
just when you think you went through the worst area ever there's always someplace else that makes the last zone look like Disneyland. Then you get to the Tomb of Giants. It makes you want to curl into ball and cry. Probably the most evil level ever designed in the history of video game. The guys at From software are truly sick bastards.
I got to try this game out this weekend, and will definitely be picking it up at some point to tide me over until skyrim / skyward sword / arkham city.

"Yay, the second bell! Maybe now I can get out of this Godforsaken place. Praise the sun! I should really use this Firekeeper soul before I head to that fortress. I'll just go back to the Firekeeper below the Firelink Shrine, like I did last time and... hey, why can't I rest at the bonfire? And where did the Firekeeper go? What's this black eyeball thingy?"
There's a hidden bonfire near the second bell. The spider thingy npc there can upgrade your flask. Of course you will need to go through blight town again but if you enter by the valley of drakes it's only a few minutes walk from firelink shrine.
