Short answer: You may only have one primary profession. If you're an alchemist, you can't make food. If you're a provisioner, you can't make spells.
Long answer: And that's not 100% accurate, because of the class trees. Up to level 9 you are an "Artisan". You will forever be able to make all recipes for all classes up through level 9 recipes.
After that you must choose your class: Scribe, Craftsman, or Outfitter. You will forever be able to make all the recipes for that class through level 19 recipes.
After that you much choose your final profession. Scribes become Sages, Alchemists, or Jewelers. Craftsmen become Woodworkers, Provisioners, or Carpenters. Outfitters become ARmorers, Weaponsmiths, or Tailors. You will forever only be able to make recipes level 20 and higher for your chosen class.
If you eventually decide that you hate your class, you can change it - if you want to go all the way back to level 9.
