Making money in crafting is more about knowing your server's market than what class you pick. There's no class that obviously makes more money than the rest, or we'd all be that class!

Easy depends on how you define it. Spell-making classes have the most recipes, so they level fastest.

Um, I image sages, who only use like 4 raws per tier, but they use tons of roots.

Again, there's really no good answer. It depends on where and when you're harvesting and how much competition you have. Every class has it's good and bad points, and every class has at some time felt like the most neglected class.

For least raws, I'd avoid woodworker and carpenter, though.
