I don't usually give opinions on these kinds of questions. First, because I only know my server's market, lol.
Second, because I think you should choose a profession you like, not necessarily one you need. If you are diligent in marketing your products and get to know crafters on your server (try the crafting channels, you should be able to buy or barter for whatever crafted goodies you need :)
