I have a few collections put together but I don't know what I'm supposed to do with them. Do you get something? Is there a point?

Ummmm... you could turn them in for the reward... Different collections are worth different amounts of coin and even some nice items. In Qeynos, the guy you want is standing by himself under a tree in the park area of North Qeynos near the castle proper.

They also give great experience which is why there are so many collection items on the broker 
Are you still on the Isle? If so, there is a woman on the eastern beach that will take your feathers and shells. Otherwise, above information is correct.
If you're from Qeynos, the collection guy is in North Qeynos as OldBlueDragon stated. Think his name is Mervin something or other.
If you are from Freeport, it's a ratonga named Renny Parvat in East Freeport.
