I should probably know this but how do you use the griffons to fly around?

Yuppers! There 3 stations in CL and ANT and you can fly to either of the other 2.
how you use them is you go up to the top. There are 3 platforms. 2 are landing and one is take off. walk on each till one pops up with a menu to go either location.

You can't use them if you have an illusion on though [or things like Baleful Countenance which does change your appearance].

You also can't use them if you have a pet. Sorry, no carry-on luggage on this flight.
On the plus side, they explode when you land now. ;-)
