Well, the short answer is this. The determining factor of what you can make is not your race/class. No matter what race/class you are, you can MAKE anything you desire. The determining factor is your tradeskill class after level 9 (i.e. craftsman, outfitter, scholar). As far as who can use what you make - depends on your inherent skills for that character. Hit the "L" key on the keyboard and find out what skills your toon utilizes. For instance, if you are trying to make heavy plate for your druid, you are up ****'s creek! This is why the bow conned red to your crusader: if you hit "L", you will realize they don't possess the bow skill :)

Furthermore, the opposite is true. If your toon(s) is/are level 25 and you are still trying to make them Tier I equipment (artisan level 1-9), then grab that paddle again! If you really want to make your own equipment for your toons, you should get your tradeskill level almost one tier higher than their current level (i.e. Toon Level=21, TS Level=29-31). That way you know the equipment you are making should be, at the very worst, on par with their level, if not above, but still wearable.

Hope this helps.

When you examine a recipe in your book, there will be a picture of the finished item in the examine window. Right click it and choose examine. It will show you what the finished item will be like if it is shaped quality.
Now, they just changed items so that they show you which character can wear it, and at what level. (This also means, unfortunately, that items do not list the skill required to use them, and you'll find that skills like "bow" are no longer in your skill window.) I assume that when you look at the "preview" of your finished item, it will tell you what classes can use it and when.
One warning: sometimes your class choice may make you unable to wear items you previously could. For example, fighters can use swords, but if you make your fighter a brawler, he can't use slashing weapons at all anymore.
Hope that made sense. :)
