After you choose a certain skill to level, can you still make other tradeskill items? and if so up to what level other skill items?

You will always be able to make anything you have the recipe for. So, from lvl 1 - 9, that would be anything. From lvl 10 - 19, that would be anything from the three possible sub-classes in your chosen class. These are:

Craftsman - woodworker, carpenter, cook
Scholar - jeweler, sage, alchemist
Outfitter - weaponsmith, armorer, tailor

After you hit level 20, the only new recipes you will ever get are those from your chosen class.

The exception to this "rule" is that you can learn to make anything in the four new disciplines that were added to eliminate interdependency.

These are:

Timbercraft (woodworking & carpentry)
Geomancy (armor & weapon smithing)
Apothecary (chemistry)
Weaving (tailoring)

Please note that learning these trades will only allow you to create subcombines. They cannot be used to create final items.
