Alchemists and provisioners. Alchemists to a lesser extent, as they still could use items crafted by others (glass from jewelers...). Most of the interdependency has been removed, however, with the new books and skills. So, even as a sage, you could make what you need (quills, paper, ink, etc).
On the second question, barbarians, trolls, halflings are given racial traits for cooking. I am sure there are more, but I can't remember them. IMHO, just pick a race that you like. I'm a gnome; I don't get that racial trait ( excuse me?! Like gnomes can't COOK??!!!) :P

With the recent changes to trade skilling, any crafter can now work alone. In Live Update #3, (Feb 17, 2005), interdependancy was abandoned and 4 new tradskills were added.

Anyone can learn these new skills and through them you are now able to make all your own sub-combines. These new skills are;

apothecary - for creating chemical compounds, (WORTs etc)
geomancy - for doing metal and stone work
timbercraft - for woodworking
and weaving - for sewing

The books for these skills are available from the merchant in your T/S wholesaler and the new buffs to go with them are already in your knowledge book.

So, you see... you can be anything you want and still be independent!

What lvl artisan do you have to be, because I am only lvl 6, and already everything has 3 components made with other skills, which each have 2 components made with other skills, and so-on. I just hate having to buy/make stuff with other tradeskills for the one I want to do

At your current lvl, 6, you are able to make everything you need even without the new books that OldBlue mentioned. They may be at different crafting stations, but you can still make them.. you just have to buy the correct recipe books as you level. Past level 10, however, you will possibly need to buy those other books (apothecary, weaving, etc), as OldBlue said. (Btw, thanks Oldbluedragon... I was too lazy at that moment!)
