I'm not 100% sure exactly if you are asking what I think you are asking... but I'll take a shot at it.
If you are meaning, which class choices will I enjoy? That's a hard call. I will let you know that from what I am hearing, pets are not quite the tanks they were in EQL... in particular they don't taunt as much or as well. Generally all of the Archtypes (and coresponding classes/subclasses) have spells or spelllike abilities that they gain per level, with a broad range of things to do, so it's not like EQL in the sense that melees gain skills while casters gain spells and and hybrids get both. They progression FEELS similar with all characters, it's just a matter of what they can do and what tools are given to them. Based on my personal experience, you might find that you prefer a class in this "go-around" that you didn't in EQL. I did NOT enjoy melee in EQL and played primarally casters, however in EQ2 my main character is a Crusader and I prefer him over my "caster" characters. A good start would probably just be asking yourself what "image" you like. What character concept seems "cool" to you?
If you are asking for a literal description of the game mechanics involved in class choice... here goes...
You make class choices at three points during your character's life. The first one is shortly after starting the game. You begin your life in Norath as a "Commoner" and will begin on The Far Journey, a ship that picked you up in the Ocean. This you probably already know. After you reach the Isle of Refuge, you will be prompted by a guard there (his name escapes me at the moment) to tell him what Archtype you are. The choices are Fighter, Scout, Mage, or Priest. You will spend the first nine levels of your life as one of these.
After you have left the Isle, reached your choosen city, and adventured enough to gain level ten you will be prompted to visit an quest NPC that will set you on the path to choosing your class. The classes open to you at that point will depend on your Archtype. Fighters may become Warriors, Brawlers, or Crusaders. Scouts may become Rogues, Bards, or Predators. Mages may become Sorcerers, Enchanters, or Summoners. Lastly, Priests may become Clerics, Shamen, or Druids. You will spend the next ten levels as one of these.
Once you gain enough experience to obtain level twenty, you are directed to another quest NPC to begin your choice of subclass. As before, your options will depend on what class you was choosen at level ten as well as, in many cases, what city you are residing in.
