At what Artisan level do I choose what I am going to be (Armorer, Provisioner, etc.)?

but u also must make a selection at lvl 10.

Just like the adventurer subclasses you make a choice at 10 and at 20. So if you wnated to become an armourer you would select Outfitter at level 10 and armourer at level 20.
