What server has the highest pop? East coast?
You're going to have to log on to every server and check for yourself.

After the server mergers almost every server has a decent population. I know stromm and MS have solid populations.
From what I have seen most servers have very few low level players though so finding groups will be rough once you leave the tutorial.

Do they still list servers in order of population? I know they used to but they took the server population list out of the login screen so i don't know for sure if htey still do or not?
No, the servers are listed alphabetically. They do have a suggested servers for newbs. You would likely find the highest low level population on whatever one they're currently pushing.
As for most total players you may be able to find some info on the SOE everquest forums from back when they were doing server merges. They did attempt though to even out the numbers of all the servers.
