New Tribute - How to change in the field?Follow

I'm sure that I'm missing something obvious, but there is something about the new tribute system that I don't seem to be able to find.

I know how to get favor and set up benefits at the Tribute Master.
Once you have left the tribute master, what command do you have to use to activate benefits or turn them off? I assume that there is some way to set up a window.

For a bonus, how do you access the alarm window? That could actually be useful midgame in some circumstances :)
