Other brewing money makers:

-armor dye (a vial of prismatic dye)
-LDoN and other smithing tempers
-tannins, used for tailoring/fletching (e.g. oak bark tannin)

Actually, just look here as just about all of it will sell in bazaar.

I brew Qeynos Iced Tea for myself and guildies all the time. Never really tried selling it in bazaar though. Decent stat drink.

There are some high end item quests that require all the trade skills to complete the quests.

Also the stat drinks.

Not just high-end quests.

Vah Shir Shaman are expected to take Brewing seriously if they want to follow their cultural path. This starts with their newbie quests.

Brewing is also needed for the essences that go into Soulstones and for much, much more than simple booze.

Also Grobb Liquidised Meat is not too bad. Decent and cheap for the melee classes. All ingredients are store bought and not too expensive. You will need a little baking skill and a corking device.

You should also check out the new GoD Brewing recipies. They actually have decent stats drinks there as well. The items needed for the better stats drinks, the Taelosian Mountain Tea, only drops from high end mobs. The regular Taelosian Tea can be foraged but has less stats.

brewing is used to make stats drinks, is used in various quests and is used in lots of other trade skills.

The world certainly has changed, there was a time when Tumpy Tonics and Heady Kiolas made brewing a basic necessity.
