Is there a way to see all your factions and their values. One of the most confusing things to me is determining what my faction is with mobs in a zone OR what i can pick a fight with without destroying my faction with a friendly group.

The only way to find out your standing with a given faction is to consider a mob of that faction. There are some mobs that you can kill without taking a faction hit on them. Look at the bestiary on this site for a mob by mob breakdown of factions.
