Get Sowed, snare the animal so it runs slow. Cast Fear on it so its running away and not attacking you and chase it around killing it. When fear wears off reapply.

Not necessarily just animals! Several classes can fear, but it's also imperative to snare the mob. Best tactic is to snare mob from distance, then fear it, and nuke/DoT/attack while it's running away. Just be ready when the fear breaks.
